Herb Tofu Breakfast Sandwich with Pickled Beets

Key Ingredients for the herby tofu spread

  • Firm Tofu: the perfect texture needed for this spread and solidifies wonderfully once it sets
  • Tahini: a substitute I use in place of coconut in a lot of tofu spread recipes I’ve skimmed over, and we use just enough to add fat and more structure without a strong taste
  • Lemon Juice: helps to thicken the tahini and bind everything together
  • Apple Cider Vinegar: just a little goes a long way to balance with the lemon
  • Nutritional Yeast: brings out some more umami flavor
  • Capers: a little more salty and vinegary flavor for the spread
  • Dill and Chives: provides a light oniony and herby flavor combo similar to some of the herb based cream cheeses
  • Garlic: we use a lot of garlic here, if you feel you are not a fan, feel free to roast your garlic to mellow out the tone of the garlic

Herb Tofu Breakfast Sandwich Assembly Ingredients

  • Love Beets Perfectly Pickled Beets: pre-cooked and sliced so they are ready to use from the package and also happen to have 30% less sugar and 60% less sodium compared to other brands
  • Bread: choose your favorite, but I feel a bagel works best for this breakfast sandwich
  • Herby Tofu Spread: our protein source
  • Cucumbers: adds a nice crunch
  • Avocado: love the extra creaminess it adds

How to make this sandwich

  1. Take your firm tofu and gently squeeze a little water out of it using your hands then pat dry with a paper towel.
  2. Place your tofu into a high speed blender or food processor with the remaining ingredients for the herby tofu spread.
  3. Blend ingredients on high until you get a smooth consistency. If using a high speed blender use a tamper to keep ingredients near blades as it blends. Scrape sides as needed.
  4. Once blended, place tofu spread into a container, seal and place in fridge to set for a few hours or overnight.
  5. To assemble your sandwich, start with 2 slices of good quality bread and smear with a layer of the tofu spread on both sides, then layer with the Love Beets Perfectly Pickled Beets on one side, cucumber slices on the other side, then add avocado and close sandwich together.
  6. Gently press layers together and enjoy. If desired to cut in half, use a sharp knife or bread knife to carefully cut the sandwich in two.

Tips for assembling your herb tofu breakfast sandwich

  • I used the Love Beets Perfectly Pickled Beets for their convenience. Literally ready-to-eat and sliced, so all you have to do is throw them into the sandwich. These beets are available now at Wegmans, Giant Eagle and select Kroger banners. Check out their store locator to find them near you!
  • I find the best way to make your sandwich stay together is to take your herby tofu spread and spread on both sides. Place each of the moveable bits like your sliced vegetables on top of the spread to act like a binder, then sandwich them together. You can also wrap your sandwich in some parchment paper and slices it with a bread knife to ensure that all the layers stay perfectly together through each bite.
  • Make your sandwich fiber packed by using whole grain bread and extra veggies. Feel free to layer on more and/or serve extra vegetables including the pickled beets, cucumbers, or even some extra greens or sprouts.

Herby Tofu Spread

  • 1 block firm tofu (drained of water)
  • 3 cloves roasted garlic
  • 1 tsp garlic powder
  • 1 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1 tsp sugar
  • Handful of dill
  • Handful of chives or 1/2 a small shallot
  • 1 tbsp capers
  • Juice of 1 lemon
  • 1 tbsp apple cider vinegar
  • 1/4 cup tahini

Sandwich Assembly

  • 46 slices of Love Beets Perfectly Pickled Beets
  • 46 slices of cucumber
  • 1/4 avocado (sliced)
  • 34 tbsp of herby tofu spread
  • 2 slices of bread (like an English muffin or one bagel)
