To say I’ve been intrigued by the viral TikTok chopped sandwich would be an understatement. I’ve been wanting to make one for a while, but with an obvious plant-based twist. So here we are!

Adding Savory Flavor Without the Weighed Down Feeling
To give the viral TikTok Chopped Sandwich a plant-based twist we are using some plant-based proteins from LightLife, specifically their Smart Bacon. It provides 5 grams of protein per serving without the saturated fat and cholesterol of regular bacon. Filling and satisfying while still making you feel good and energized.
Key Ingredients and Substitutions
- Roll: Choose your favorite deli style roll to load your sandwich with. I like using fresh rolls from our local baker, but any sandwich style bread can work for this.
- Plant Based Bacon: I used LightLife Smart Bacon to add a fun, crispy and savory element to the sandwich. Also helps keep this sandwich 100% plant-based. If you do not have access to this, swap for some sun-dried tomatoes.
- Lettuce: I like using Romaine lettuce for an extra bit of crunch. Feel free to use a different green or a mix of different ones to your liking.
- Tomatoes: Flavorful tomatoes work the best. You can use a range of in season tomatoes, heirloom, plum tomatoes, or even cherry tomatoes. If you need a tomato alternative, roasted red bell peppers work really well.
- Chickpeas: I used a can of chickpeas for convenience, but feel free to use chickpeas you cooked from scratch. You can also change it up, and use different beans like butter beans or even baked tempeh as an alternative.
- Onion: Red onions or shallots work really well here. If you’d like to tone down some of the onion flavor, see tips below.
- Pickled Jalapeno: Completely optional, but adds a little spice. You can swap with some other pickled vegetables or some marinated artichoke hearts.
- Tahini: For the best flavor, choose a good quality tahini. This will prevent your dressing from taking on a bitter flavor.
- Dairy-Free Yogurt: Keep it plant-based by using your favorite plant-based yogurt. My typical go-tos are soy and cashew yogurt.
- Nutritional Yeast: This helps add some umami flavor to our ranch. You can also swap for a little bit of yellow or white miso paste instead to taste.
- Lemon: Fresh lemon works best. You can also use lime if you don’t have lemon available.
- Herbs: I used a combination of fresh dill and dry chives. Feel free to adjust to meet your desired flavor.
How to Make a Chopped Veggie Sandwich
To a medium bowl, combine the tahini, yogurt, lemon juice, nutritional yeast, dill, garlic powder, onion powder, parsley and a pinch of salt. Whisk together until the sauce thickens then add 3 tablespoons of cold water to thin it out. If still too thick, add a tablespoon more water at a time while whisking until the dressing is to your liking. Adjust with more salt to taste as desired.
Cook the Smart Bacon according to package instructions then set to the side.
To a large cutting board add your lettuce then top with the tomato slices, red onion slices, pickled jalapeno and then the chickpeas. Season the filling with a pinch of salt and freshly cracked black pepper then drizzle on half the dressing.
With a large sharp chef’s knife, proceed to cut the ingredients into small pieces. Use the knife to mix and combine the ingredients evenly in the dressing. Add more dressing if needed.
Use the knife to shape a portion of the mixture to fit your roll. Place the open sub roll overtop then use the knife to hold the filling while you flip it over. Drizzle more dressing overtop if needed then enjoy.

- Thin out your ranch to your liking. If needed, add additional water one splash at a time while whisking to get your desired level of creaminess.
- Use cold water when whisking your tahini dressing. When whisked together with the tahini, it will cause the tahini to fluff up and take on a creamier texture.
- Tone down the onion flavor. For those that don’t like strong onion flavor you can take your sliced onion and place them in a bowl of cold water for 5-10 minutes before making the sandwich. This helps remove some of the strong flavor notes. Rinse, pat dry and it’s ready to use.

This sandwich when fully assembled is best when consumed immediately. You can prep and chop all the ingredients minus the lettuce and dressing and store in an airtight container in the fridge for up to 24 hours. This was delicious and such a clever concept! I tossed in a couple of extra veggies we had on hand, tweaked the dressing a bit (added some chili-garlic paste for more heat and also some of the jalapeno brine), and used flour tortillas instead of buns because that’s what we had. I have to say, though, that getting those bacon slices apart was a challenge! I finally used a spatula to slide in between some of them, but then decided to just break them apart in the pan while they were cooking since I ended up crumbling them. So, so good.
