Description

This Chopped Veggie Sandwich is a plant based twist to the viral TikTok Sandwich. It gives you the perfect sandwich bite evenly mixed with dairy-free ranch every single time.


Ingredients

Tahini Ranch Dressing

  • 2 tbsp tahini
  • 2 tbsp unsweetened plain plant based yogurt
  • Juice of 1/2 a lemon
  • 1 tbsp nutritional yeast
  • 1 tbsp fresh dill, minced
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dry parsley
  • 3 tbsp cold water

Sandwich Assembly

  • 8 pieces LightLife Smart Bacon
  • 4 cups lettuce
  • 1 medium heirloom tomato, sliced
  • 1/4 medium red onion, thinly sliced
  • 34 tbsp pickled jalapeno
  • 1, 15 oz canned chickpeas
  • 3 sub sandwich rolls, sliced partially open
  • Salt and pepper to taste

Instructions

  1. To a medium bowl, combine the tahini, yogurt, lemon juice, nutritional yeast, dill, garlic powder, onion powder, parsley and a pinch of salt. Whisk together until the sauce thickens then add 3 tablespoons of cold water to thin it out. If still too thick, add a tablespoon more water at a time while whisking until the dressing is to your liking. Adjust with more salt to taste as desired.

  2. Cook the Smart Bacon according to package instructions then set to the side.

  3. To a large cutting board add your lettuce then top with the tomato slices, red onion slices, pickled jalapeno and then the chickpeas. Season the filling with a pinch of salt and freshly cracked black pepper then drizzle on half the dressing.

  4. With a large sharp chef’s knife, proceed to cut the ingredients into small pieces. Use the knife to mix and combine the ingredients evenly in the dressing. Add more dressing if needed.

  5. Use the knife to shape a portion of the mixture to fit your roll. Place the open sub roll overtop then use the knife to hold the filling while you flip it over. Drizzle more dressing overtop if needed then enjoy.


Notes

Customize your filling to your liking. Change up the veggies, add more or use less ingredients as you see fit and feel free to use a different dressing. Truly all the additions and combinations are endless in these sandwiches.

Thin out your ranch to your liking. If needed, add additional water one splash at a time while whisking to get your desired level of creaminess.

Use cold water when whisking your tahini dressing. When whisked together with the tahini, it will cause the tahini to fluff up and take on a creamier texture.

Tone down the onion flavor. For those that don’t like strong onion flavor you can take your sliced onion and place them in a bowl of cold water for 5-10 minutes before making the sandwich. This helps remove some of the strong flavor notes. Rinse, pat dry and it’s ready to use.
