Summer Goodness in a Bowl

While the summer fruit is still abundant, make this strawberries and cream oatmeal, top it with some fresh berries and relish in the feeling of summer while it is still here. And since oatmeal is my forever go to for breakfast, to keep it interesting I just love playing around with different flavor combinations. If you’re in need of a little pizzazz in your average oats, you might end up loving this bowl just as much as me.

But don’t worry! If you aren’t a fan of oatmeal, I get it. You might want to change up the texture and bake them or if you just like more of a savory option for breakfast, there’s plenty of options to nourish yourself with.

Key Ingredients

  • Rolled Oats: Also referred to commonly as old fashions oats. We want these for our oats because they have a quick cook time, but also have a great texture.
  • Strawberry Preserves: Technically, you can change these out to whatever preserves flavor you’d like, but to keep with the name, we are sticking with strawberry today. The preserves should be enough to sweeten your oatmeal naturally.
  • Coconut Milk: The cream portion of our oats. They help add a lovely creamy consistency for our oats and add a richness that normal cream would do.

How to Make Strawberries and Cream Oatmeal

Start by combing your wet ingredients in a sauce pan and bring to a simmer. Then add in your dry ingredients and give everything a good stir.

Allow your oat mixture to begin to simmer and make sure to continuously stir for a few minutes until the oats have thickened slightly or to your desired consistency.

Tips for the Perfect Creamy Breakfast Bowl

  • For creamy oats, keep stirring. Stirring your oats frequently while they simmer is a great tip for improving the creamy consistency of your oats.
  • If meal prepping for the week, undercook your oats a little. You can leave your oats looser in consistency and then store them in individual containers. As they sit in the fridge, they will naturally thicken to the perfect consistency.
  • Use plant based milk instead of water for extra nutrition, but also for a more creamy consistency.

Storing Your Oatmeal for Meal Prep

This oatmeal is great to prep in advance for the week. Once cooked, pour your oatmeal into individual airtight containers for easy grab and go breakfast. This oatmeal will last up to 5 days in the fridge.

Things to note, you will notice that your oatmeal will continue to thicken as it sits overnight. If you want to loosen it up, just stir in some milk before serving.

Serving Your Oatmeal

You can enjoy this oatmeal as a meal or as a snack. If enjoying as a meal, feel free to top with some extras to help balance it out and provide optimum nutrition that will help keep you feeling full.

Add some nuts or nut butters to your bowl or use soy milk in place of almond milk for a little added protein. Add some extra fresh fruit like strawberries to the mix for extra fiber and vitamin C.

Description

This summery bowl of strawberries and cream oatmeal is easy to make and sweetened with the help of strawberry jam. Perfect for meal prep and the perfect balance of sweet. 


Ingredients

Scale
  • 3 cups unsweetened almond milk
  • 1/2 cup full fat coconut milk
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 1/2 cups rolled oats
  • 3 tbsp ground flax seeds or chia seeds
  • 1/3 cup strawberry preserves

Instructions

  1. Add your almond milk, coconut milk, vanilla, and salt to a large sauce pan and stir well to combine.
  2. Bring mixture to a boil then reduce heat to a low simmer and add your oats, flax seed, and strawberry preserves.
  3. Stir oatmeal mixture, and continue to stir and cook for about 10 to 13 minutes or until oats have thickened.
  4. Serve immediately or portion oats into individual serving containers to use throughout the week.

Notes

If saving these oats for meal prep through the week, note that your oats will continue to thicken as it sits in the fridge. If oats are too thick, feel free to loosen them up with a little extra milk.

To reheat, place in the microwave for about 1 minute or 1 minute 30 seconds until warmed through. Add additional milk, if desired before serving.
