Vegan Everything Bagel Stuffing

I’m a bagel girl. Coming from New York, I have to be. So it only made sense that I would be inspired by this iconic treat and try to infuse some holiday fun into it. This stuffing uses one of my favorite bagels and the flavors that come out of it are absolutely incredible. Considering this bagel has ALL the seasonings on it, it really is no wonder that it actually makes sense to use it for the perfectly seasoned stuffing of your dreams. A super easy recipe, and considering the times, I’ve made it easy to scale this recipe for smaller crowds this holiday season.

Key Ingredients

  • Everything Bagels: doesn’t matter if they are fresh, stale, from the deli or store bought (I personally used the brand Dave’s Killer Bread for this)
  • Flax Egg: replace regular egg in this and helps to bind everything together
  • Onion and celery: flavor and crunch enhancers to stuffing
  • Garlic: fresh is best, but jarred minced garlic is helpful if you want to save time and peeling
  • Thyme, rosemary and sage: enhance that holiday flavor into the stuffing
  • Everything but the bagel seasoning: it has all the essential flavor enhancers and helps to compliment the flavor from the bagel
  • Vegetable Broth: our moisture and what we can manipulate to help control the desired texture of our stuffing

How to make this easy vegan everything bagel stuffing recipe

  1. Set oven to 350F. Take everything bagels and cut in half then cut into small cubes.
  2. Place cubed bagel pieces onto a baking sheet spread out evenly and toast in the oven for 10 minutes. Remove from heat and set aside.
  3. Make your flax egg by combing the ground flaxseed and water together, then allowing to gel for 5 minutes.
  4. Place a medium size sauce pan over medium high heat. Add in oil, onions, celery and a pinch of salt and sauté until onions have softened.
  5. Stir in minced garlic and sauté again until fragrant.
  6. To the pan, add in cubed bagels, flax egg, herbs and a quarter of the vegetable broth. Stir well to combine and slowly add more vegetable broth until bagel pieces have soaked some of the broth and softened slightly.
  7. Scoop soaked stuffing into a small small baking dish or large bread pan and cover with foil.
  8. Place baking dish into the oven and bake for about 25 minutes. Remove foil and bake for another 10-15 minutes until top is golden, then remove from the oven and serve as desired.

Tips for making this stuffing

  • If your bagels are really soft or fresh, toast them up a little bit before using. If your bagels are stale and tough, skip the toasting step in this recipe, cut into cubes and proceed with the below recipe.
  • You can make your stuffing mushy or crisp as you see fit. I personally like an in between of those textures, so I specified the amount of liquid I used to achieve the texture you see in the photos. Feel free to increase or decrease as desired. Ultimately, I suggest slowly adding in your liquid. If you add all of the liquid at once you won’t be able to subtract later on. To be cautious consider adding liquid in 1/4 cup increments until desired consistency is achieved.
  • This recipe is for 3-4 servings, meant for smaller gatherings or groups. You can easily double this for a bigger crowds as desired.
  • Make this more indulgent by adding a tablespoon of vegan butter to the pan after the onions and celery cook.

Ingredients

  • 2 everything bagels
  • 1 tbsp ground flax seed
  • 2 tbsp water
  • 2 tsp olive oil
  • 1/4 small red onion (diced)
  • 1 stalk celery (diced)
  • 2 tsp everything but the bagel seasoning
  • 3 cloves garlic (minced)
  • 1/2 tsp dry thyme
  • 1/4 tsp dry rosemary
  • 1/4 tsp dry sage
  • 1 cup vegetable broth
  • Salt as needed

Instructions

  1. Set oven to 350F. Take everything bagels and cut in half then cut into small cubes.

I used about 1 cup vegetable broth, but feel free to use less or more based on your preference for stuffing consistency.
  7. Scoop soaked stuffing into a greased small baking dish or large bread pan and cover with foil.
  8. Place baking dish into the oven and bake for about 25 minutes. Remove foil and bake for another 10-15 minutes until top is golden then remove from the oven and serve as desired.

Notes

  • To make this recipe more indulgent, feel free to add a tablespoon of butter after you’ve cooked the onions and celery.
  • Make it gluten free by using gluten free bagels instead.

  1. Hi, I’m making this stuffing for Thanksgiving and I’m wondering will it be too mushy if I make it a day ahead?

    1. Hi Ann! It should be fine. What I would do is just reheat in the oven to firm back up before serving. We reheated leftovers of this and it worked out great.
