Mango Overnight Oats

These mango overnight oats use a flavorful mango milk to help infuse extra sweet mango lime flavor into each bite. Easy to make ahead for grab and go breakfast.

When they are in season, I keep a range of different mangos on hand at all times. Different varieties of fresh mango, dried mango for snacking, and frozen mango. And with so many options to choose from, mangos continue to find their way into just about everything I make this time of year.

On repeat, for example, I’ve been making these Mango Overnight Oats. And no we are not just stirring in a few chunks of mango in. We’re blending the mangos up in a delicious mango milk that we stir into our oats instead. It makes them extra creamy and delicious.

Key Ingredients and Substitutions

  • Mango: You can use frozen or fresh mango. If using fresh mango, varieties like kent and ataulfo mangos are nice and sweet for this recipe.
  • Rolled Oats: For the best texture, use rolled oats. To make gluten-free choose gluten-free oats. I do not recommend swapping for quick oats or steel cut oats. Instead, follow this overnight steel cut oats recipe for proper preparation.
  • Milk: I like to use either soy milk for added protein or I will use oat milk or coconut milk for some added sweetness. Do note that if you use oat milk or coconut milk that the protein content of this jar will not be the same.
  • Sweetener: You can use what you like! I tend to use either maple syrup or dates to sweeten my oats. If using dates, make sure they are soft. If hard, soak is some warm water for 10 minutes before blending.
  • Chia Seeds: Rich in omega 3s and helps to gel the oats up as they soak. You can swap for some ground flaxseeds as an alternative.
  • Lime: Helps bring out extra flavor from the mango. Use a fresh lime to get both the juice and zest.
  • Yogurt: I used a plant based yogurt to keep this vegan. I tend to use Forager Project, but you can also try with a high protein yogurt option like Siggi’s Plant Based instead.
  • Turmeric: This is optional, so feel free to leave this out if you don’t have it on hand. Will make the mango milk a brighter yellow and helps add some extra antioxidants to your oats.

How to Make Mango Overnight Oats

Place the mango, hemp hearts, lime zest and juice, yogurt, syrup, turmeric, and milk into a blender cup. Blend on high until the mixture is completely smooth. Taste and adjust the sweetness to preference.

Set up 3 airtight containers. Add 1/2 cup rolled oats, 1 tbsp chia seeds and a pinch of salt to each container and stir to combine.

Next, measure and pour 3/4 cup of the mango milk mixture into each container. Stir the mixture really well making sure you are evenly mixing the chia seeds throughout. Allow the mixture to sit for 5 minutes then give it another good stir.

Seal the containers and place in the fridge for 4-6 hours or overnight to set. When ready to eat, top with additional toppings of your choice and enjoy.

Expert Tips

  • Adjust sweetness to your preference. Mango can sometimes be really sweet and flavorful on it’s own. If it isn’t, feel free to add more sweetener to your oats so they match your preference.
  • For more protein try a higher protein milk like soy milk or pea protein milk with some hemp hearts added to your blended milk. You can also try adding protein powder and adjust the thickness of the mango milk to your preference with extra milk or water.
  • Adjust the thickness of your oats to your liking. If you prefer your oats to be thinner, stir in a little more milk before serving.
  • Add fruit right before serving. This will keep the fruit fresh and prevent it from going bad while it sits in the oats.
  • To enhance the absorption of the antioxidant curcumin from turmeric, add a tiny pinch of black pepper to the mango milk. This small amount of black pepper should be undetectable in taste, but will enhance the absorption of this antioxidant exponentially.

Frequently Asked Questions

How long do overnight oats keep?

I generally like keeping 3 prepared jars in the fridge at a time. They should be good for 3-4 days when stored properly.

How long does it take overnight oats to set?

For a really creamy texture, allow the jars to set in an airtight container in the fridge for 4-6 hours. If you are pressed for time, a quick soak still works. Allow the oats to soak in the mango milk for about 30 minutes. Stir well and enjoy topped as desired.

Can I use a different fruit?

Yes. You will want to adjust the liquids and sweetener depending on the fruit being used. So make sure to taste and adjust.

How to Serve
