Description

These mango overnight oats use a flavorful mango milk to help infuse extra sweet mango lime flavor into each bite. Easy to make ahead for grab and go breakfast.


Ingredients

Scale
  • 1 1/4 cup frozen mango
  • 2 tbsp hemp hearts
  • Zest and juice of one lime
  • 4 tbsp unsweetened plant-based yogurt
  • 2 tbsp maple syrup or 2 medjool dates*
  • 1/4 tsp ground turmeric
  • 1 1/2 cups soy milk, coconut beverage, oat milk
  • 1 1/2 cups gluten-free rolled oats
  • 3 tbsp chia seeds
  • Kosher salt

Toppings

  • Cashew Butter
  • Toasted Coconut Flakes
  • Lime Zest

Instructions

  1. Place the mango, hemp hearts, lime zest and juice, yogurt, syrup, turmeric, and milk into a blender cup. Blend on high until the mixture is completely smooth. Taste and adjust the sweetness to preference.
  2. Set up 3 airtight containers. Add 1/2 cup rolled oats, 1 tbsp chia seeds and a pinch of salt to each container and stir to combine.
  3. Next, measure and pour 3/4 cup of the mango milk mixture into each container. Stir the mixture really well making sure you are evenly mixing the chia seeds throughout. Allow the mixture to sit for 5 minutes then give another good stir.
  4. Seal the containers and place in the fridge for 4-6 hours or overnight to set. When ready to eat, top with additional toppings of your choice and enjoy.

Notes

Adjust sweetness to your preference. Mango can sometimes be really sweet and flavorful on it’s own. If it isn’t, feel free to add more sweetener to your oats so they match your preference.

For more protein try a higher protein milk like soy milk or pea protein milk with some hemp hearts added to your blended milk. You can also try adding protein powder and adjust the thickness of the mango milk to your preference with extra milk or water.

Adjust the thickness of your oats to your liking. If you prefer your oats to be thinner, stir in a little more milk before serving.

Add fruit right before serving. This will keep the fruit fresh and prevent it from going bad while it sits in the oats.

To enhance the absorption of the antioxidant curcumin from turmeric, add a tiny pinch of black pepper to the mango milk. This small amount of black pepper should be undetectable in taste, but will enhance the absorption of this antioxidant exponentially.
