Magic Bars

These vegan magic bars are a sweet and buttery treat loaded with chocolate chips and coconut. Simple to make and just 10 ingredients!

I’ve been on a bar kick recently, and one type of bar that always comes to mind is a favorite I once enjoyed at one of my favorite Philly vegan and gluten free bakeries, Sweet Freedom. The bars themselves have a cookie like base and were topped with a layer of chocolate and coconut flakes. Original magic bar recipes typically use crushed graham crackers and butter to achieve their magical base, but I of course opted for plant based ingredients to make the magic live on for me.

What ingredients do you need for vegan magic bars? 

  • Rolled Oats: The bulk of our base are oats. To make sure these bars are gluten free, opt for gluten free oats.
  • Walnuts: Helps to keep the base of the bar moist and you get the benefit of extra omega 3s.
  • Coconut Milk: Our fat of choice that will help to accentuate and maintain a lovely soft and chewy texture.
  • Molasses: An ingredient I add to my chocolate chip cookies that helps to accentuate that buttery taste we are looking for.
  • Coconut Sugar: You can use other sugars as well at the same amounts.
  • Cinnamon: Helps to emphasize the sweet without having to add extra sweetener.
  • Toppings: Coconut flakes, chocolate chips and rolled oats, but feel free to add other layered ingredients if they make you happy.

How to make magic bars

  1. Set oven to 350F. Add your oats, walnuts, sugar, cinnamon, coconut flakes, and salt to food processor and pulse a few times to get an even crumb started.
  2. Add in coconut milk and molasses and process on high until the mixture turns into a mold-able dough.
  3. Place dough base in an 8×8 pan and  with your hands start pressing mixture down until you have it evenly spread out throughout the bottom of the pan.
  4. Top with chocolate chips and then sprinkle some extra coconut flakes over top. You can add whatever additional toppings you want as well. Opt for adding nuts, dried fruit, etc.
  5. Pour a few tablespoons of coconut milk over top of your bars before placing in the oven.
  6. Once bars have cooked, remove from oven and allow to cool before cutting into them.

All bar ingredients layered over the base and ready to be baked in the oven.

Tips for making and enjoying the perfect magic bar

  • When processing the ingredients for the base of your magic bars, if you notice the mixture is not sticking together, add 1-2 tbsp of coconut milk and process again until it appears to stick together.
  • To make spreading the dough mixture a little easier, you can use the smooth bottom of a drinking glass to help press the dough down evenly.
  • Make sure to allow your bars to completely cool before cutting into them, about 15-20 minutes.
  • You can store your bars in the fridge or the freezer. Just make sure that bars are separated so that they don’t stick together. Layering parchment paper between each bar should help with preventing any sticking.

Cookie Base

  • 2 cups gluten free rolled oats
  • 1/2 cup walnuts
  • 1/4 cup coconut flakes
  • 3 tbsp coconut sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp molasses
  • 1/3 cup canned coconut milk

Bar Toppings

  • 1/2 cup dairy free chocolate chips
  • 3 tbsp canned coconut milk
  • 3 tbsp coconut flakes
  • 3 tbsp rolled oats (optional)
  • Pinch of salt (optional)

Instructions

Cookie Base

  1. Set oven to 350F.
  2. In a food processor, add oats, walnuts, sugar, cinnamon, coconut flakes, and salt and pulse a few times to get an even crumb.
  3. Add in coconut milk and molasses and process on high until the mixture starts to stick together.
  4. Pour dough base on to an 8×8 baking pan and with your hands start to press mixture down evenly to cover entire surface of the pan.

Bar Toppings

  1. Evenly sprinkle chocolate chips over top of the bar base then repeat process with coconut flakes and other dry toppings.
  2. Drizzle coconut milk over top of the bars and then take tray and place into the oven.
  3. Bake bars for 25 minutes or until coconut flakes are nice and toasted to a golden color.
  4. Remove bars from oven and allow to completely cool for about 15 minutes before cutting into them and enjoying.

Notes

  • Make sure to use gluten free oats to ensure that these bars are gluten free.
  • You can opt for different sugar in place of the coconut sugar. You can replace the sugar with 3 soft medjool dates or if using a liquid sweetener, keep same amount, but lower amount of coconut milk from 1/3 cup for the base to 1/4 cup canned coconut milk.

  1. If I’m allergic to walnuts (and all nuts), do you have any recommendations for substitutions? Or can I just omit the walnuts? Love this recipe!!
