Need an energy bite recipe that is easy to make and tastes like an oatmeal raisin cookie? It can seem difficult to hit all of those checkmarks, but I’m happy to say that this recipe does deliver for the perfect pick me up snack. Honestly, what is not to love about all of that? And to be real for a minute, it’s nice to have a wholesome snack that is something other than apples and peanut butter. No offense at all as I am an avid apple and peanut butter fan.

Why opt for an oatmeal raisin cookie bite for a snack? 

Energy bites are great because they generally need so few ingredients to make. Did I mention that these ingredients also happen to be wholesome? Using more whole ingredients in these energy bites helps to keep your energy stable thanks to the stable combination of complex carbs, fibers and healthy fats. Having this combo helps to slow digestion time to help you stay fuller for longer. And thanks to the fiber, you also get a more steady rise and fall of your blood sugars instead of a steep spike and dramatic fall that usually leads to that crashing feeling many of us feel as the day drags on.

How to make no bake oatmeal raisin cookie bites

These bites couldn’t be simpler. All you need to do is place all of the 5 ingredients into your food processor and blitz it up. It should form into a moldable dough. All you do is lightly wet your hands and scoop a small portion to roll into individual balls. Enjoy as is, or feel free to jazz them up a little based on your preference.

Ways to jazz up your energy bites

While these are meant to have an oatmeal raisin cookie flavor, don’t feel like you are locked in. The great thing about bites are that they can be absolutely customizable to your preference.

  • Try different types of dried fruits. You can opt for cranberries, apricots, mango, or dates in place of the raisins.
  • Roll in extra add ins. Add chocolate chips or even do a combo of different items like coconut shreds and dried cranberries together.
  • Try different nut or seed butters. You can definitely make these nut free by swapping the peanut butter for something like sunflower seed butter or soy nut butter.
  • Coat your energy bites. I love rolling these energy bites in cocoa powder or matcha powder. It’s so subtle, but the cocoa powder definitely makes me feel like I’m biting into a special chocolate peanut butter treat. So good!
  • Add spices. When I made these, I added a little pumpkin spice to the dough and have done cinnamon previously too. Try other spices like ginger, cardamom or nutmeg for different flavor profiles.

Tips for prepping these energy bites

  • Blend really well. Keep blending to make sure your dough is perfect for molding into the proper doughball without it crumbling or falling apart. If dough is not coming together, try adding more wet ingredients at 1 tablespoon at a time. For example, add another tablespoon of maple syrup and then blend again.
  • Wet your hands. Want to avoid sticky hands and also help give your doughballs better shape? Just wet your hands lightly before
  • Storing your energy bites. Place your complete energy bites in a container and freeze for eating later. Or feel free to place in fridge to firm up. They will last a lot longer in the freezer.

Ingredients

Scale
  • 1 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1 tbsp ground flax seed
  • 1/4 cup natural peanut butter
  • 1/4 cup raisins
  • 1/2 tsp cinnamon (optional)

If coating energy bites

  • Cocoa powder or matcha powder for rolling

Instructions

  1. Add all ingredients to a food processor and process for about a minute until it forms a moldable dough.
  2. Using slightly wet hands, scoop some dough into your hands and form 12 even balls.
  3. If coating energy bites, add a little cocoa powder or match powder to a bowl. Take each individual bite and toss around to coat evenly around the ball. Shake off excess.
  4. Enjoy as is or store energy bites in a container in the freezer to firm up.

Notes

  • These bites are easy to customize! Feel free to replace the raisins with other dried fruit based on preference. 
  • Make sure that the nut butter you choose is natural and runny. If your nut butter is stiff, try loosening up some of the natural oils in it but placing in the microwave for about 10 seconds. 
  • If dough is not coming together, add an extra tbsp of peanut butter and pulse together again in your food processor.

    1. If doing without food processor you can make these by replacing the rolled oats with same amount of instant/quick oats.
