Description

This Watermelon Smoothie recipe is refreshing and perfect for summer. A creamy blend of watermelon, strawberries, vegan yogurt and lime.


Ingredients

Scale
  • 1 1/2 cups fresh watermelon
  • 2 cups frozen strawberries
  • 2 frozen banana
  • Juice and zest of half a lime
  • 2 tbsp vegan yogurt
  • 1 tbsp maple syrup

Instructions

  1. Add all of your ingredients to a high speed blender in the order listed, making sure the watermelon is added first.
  2. Cover the blender with a lid and blend on high, using a tamper to help push fruit towards the blade.
  3. Pour your smoothie into a glass or into a hallowed out watermelon rind. 

Notes

You can adjust the creaminess of your smoothie by adjusting the liquid. The ingredients listed should make it pretty creamy and scoopable, but you can add a small amount of water to help thin it out more. Start with 1/4 cup and then add more as needed.

If you’d like to serve your smoothie in your watermelon, use a mini watermelon. Cut it in half, scoop out the flesh and cut the very end of the rind on one end to help level it off so it sits flat on a table. When you make your smoothie, just scoop it up into the makeshift bowl. After you’re done eating, you can compost it.

You can replace the banana with frozen zucchini if you are not a fan of banana. Peel your zucchini and then cut it into small chunks and freeze in your freezer for later use.
