Lentil Vegetable Wellington

A lentil vegetable wellington you can be proud of. Stuffed with an easy lentil vegetable mixture, this dish comes together quickly.

Cook lentils according to package. In a pan, saute onions, celery  and mushrooms with a pinch of salt until softened. Mix soy sauce, tomato paste, and seasonings. Then fold in a flax egg.

Add your lentils to the middle of the puff pastry in the shape of a log.

Take each strip and go in opposite directions to braid it in whatever pattern you wish. Then brush your puff pastry with some plant based milk before baking.

Allow a few moments to set after it comes out of the oven before slicing into it.
