These healthy Crock Pot Baked Apples taste like the ooey gooey middle of an apple pie. Perfect make ahead topping on oatmeal or toast. Easy, budget friendly and a great way to get fruit in first thing in the morning.

step 1

Cut and peel your apples as desired. I like cutting them into thin slices as they tend to cook down faster.

Place the apple slices into your crock pot and then coat with cinnamon, cardamom, a tablespoon of sugar, lemon juice and cornstarch.

step 3

Place on high in your crock pot until the apples start to soften. Make sure to stir occasionally to help move the apples around.

Enjoy the apples as a snack or on top of oats, vegan yogurt or to top your toast in the morning.
