Vegan & Easy to make
Make a flax egg by combining 1 tbsp ground flax seeds and 2 tbsp water and set aside. To a mixing bowl mix all your dry ingredients. Then fold in your flax egg, tahini, maple syrup and molasses.
No need to chill. You want to work with a soft dough. Take a cookie scoop and portion your dough on a parchment lined baking sheet.
Flatten your cookies slightly with your palm, sprinkle with a little extra sugar and then place in the oven to bake.
These cookies are perfectly spiced and nice and chewy. Perfect to serve with a nice glass of plant based milk.
