Chop your cucumber, tomatoes, bell peppers and onions and place in a bowl with sunflower seeds and your cooked lentils.
Combine some EVOO, smoked paprika, garlic, cumin, oregano, coriander, red pepper, nutritional yeast, lime juice and maple syrup and give a good mix.
Pour your sauce over your veggies and lentils and then give a good toss to fully combine.
Serve as desired. These lentils go great with rice, avocado and greens, but you can also stuff into pitas or use in taco shells.
