Vegan Pumpkin Bread with Streusel Topping

Perfectly Spiced, moist and fluffy

"There is nothing more satisfying than when your attempt at a new recipe looks exactly like the blog’s pictures and that’s exactly what happened with this recipe! This was my first time using aquafaba to replace eggs in baking, and I’m so glad I did because it made my loaf so tender and fluffy. This will definitely become an autumn staple recipe." - user review

streusel topping

In a bowl combine flour, pumpkin spice, vegan butter and brown sugar until you get a crumbly mixture.

This is our "egg" and it acts like an egg white, but it helps to keep the bread moist and fluffy. Aquafaba is just the liquid from a can of chickpeas. You can foam it up with a hand mixer or a milk frother.

Add your sugar and the remaining wet ingredients and whisk to combine. Then fold it your dry ingredients.

Bake It

Spread your batter into a loaf pan and then top with your streusel. Then bake for 45-50 minutes.

Slice and enjoy!
